The Copper Hen Cakery finds a home and adds plans to include a full service restaurant.

This week, the couple behind the farm-to-table bakery, the Copper Hen Cakery, has announced that they've not only found a home, they've expanded their plans to include a full-service restaurant. Chris and Danielle Bjorling announced late last week, on the page of their successful Kickstarter campaign, that after a lot of searching and a lot of letdowns, they've finally found a home on Nicollet Avenue's Eat Street.

The new bakery will be located at 2515 Nicollet Ave in Minneapolis, where they'll serve farm-to-table baked goods and farmhouse-style lunch and dinner options.

We first learned of the Copper Hen last fall when they launched a Kickstarter campaign to help fund their farm-to-table bakery concept. The campaign was successful, raising over $11,000, and since, the duo has been looking for a home to set up shop. 

According to their Kickstarter update, "The last few months have definitely been perilous with finding the perfect location for the Copper Hen. Several locations fell through and things looked bleak. However, in early December we got a call from our real estate agent saying that he thought he found THE location."

The lunch and dinner menu will be comprised of scratch made, farm-to-table food and will include a list of locally brewed beers. According to their site, the menu will include, "soups, salads, sandwiches, entrees (such as chicken pot pie, cast iron skillet macaroni and cheese, shepherd's hand pies made with a stout gravy, juniper chicken stew and more), pizzas, cheese and meat boards, large chocolate chip cookies served straight out of the oven with ice-cream, and lots more!"

Look for the Copper Hen Cakery & Kitchen to open their doors sometime late this spring.
