Two veteran chefs of the Minneapolis food world are converging on a new space with a historic past. Yesterday Mpls.St.Paul Magazine reported that the former Bacon Drug in Excelsior will undergo a transformation to become Victor's, a new Italian-influenced restaurant with a rooftop patio.

The kitchen will be run by chef Phillip Becht, the one-time head chef at Modern Cafe who has worked closely in the past with chef Steven Brown (now of Tilia). Alongside him as chef de cuisine will be Brian Crouch. Crouch worked the line at La Belle Vie as well as Cafe Levain, and most recently at Lola's Lakehouse.

The building itself has something of a rock 'n' roll reputation. Bacon Drug is believed to be the spot where Mick Jagger encountered one Mr. Jimmy, sipped a cherry soda, and wrote a famous song lyric about how you can't always get what you want.

Crouch has said that the menu will be influenced by Northern Italy and will include pizza and pastas. No opening date has been announced yet.
