|Savory-sweet meats at Chef Shack's latest brick-and-mortar outpost|
When we spoke to Chef Shack Ranch's co-owner Lisa Carlson, she would only tell us that what goes on their super crispy whole-joint Kadejan Farms chicken wings is a magical mix they call "secret wing dust."
We took them to the lab (a.k.a went back for seconds) to try to find out more, but really only confirmed the knowledge that these are incredibly addictive wings.
On the surface of the wonderfully-textured skin, we detected notes of warm cinnamon-like spice, some sugar, definitely some salt, and maybe a little smoked paprika, all offset by thinly sliced jalapeños that decorate the plate, and the festive cranberry dipping sauce that comes on the side. As good as all the slow-smoked, sauce-slathered meats are from Chef Shack's new barbecue-focused concept, the wings are all anyone could talk about once we got away from the Ranch.
