Birchwood Cafe to host a goodbye party and a pop-up

With days left before they close, Birchwood prepares for a pop-up
This Saturday, February 22, marks the last day of Birchwood Cafe as we've known it. However, fans of this Seward favorite won't be without its local-loving cuisine for too long. As they begin construction on a new, improved, and expanded Birchwood, owner Tracy Singleton and chef Marshall Paulsen will pop up inside the kitchen at Verdant, and we're all invited.

Construction on the new site is expected to last for 10 weeks, but we can still catch our Birchwood favorites at Verdant Tea. Beginning March 1, Birchwood will take over breakfast service from 8 a.m. to noon seven days a week. As owner Tracy Singleton told us the menu will be, "A true collaboration between Marshall and David [Duckler, Verdant's co-owner]." The menu will take their classics and put them through the lens of Verdant's favorite tea-growing regions in northern China. Singleton explained, "Think traditional northern Chinese street food meets eastern Seward Savory Waffle which, as you know, is anything but traditional!"

In addition to the savory waffle, the menu will include items like Chinese-style crepes with shiitake mushrooms and pickled root vegetables; hoisin-glazed bacon; scallion sweet corn pancakes, and stir-fried potato strings. For something sweet, they will serve youtiao, Chinese doughnuts with green tea powdered sugar. Plus, as diners have come to expect from Birchwood Cafe and Verdant Tea, there will be vegan, vegetarian, and gluten-free items, as well as an assortment of pastries available throughout the day.

Before they leave the Birchwood space, however, the staff would like to thank friends and fans with a closing time celebration that will last all day this Saturday. They will serve Peace Coffee at no charge all day and at 5 p.m., the dinner special will feature two burgers and two beers for $30. Their usual Saturday night pizza deal will also be around for one last time. 

Well-wishers are invited to sign the walls and share special memories by way of graffiti.
