Starting every fall, Tilia introduces a new twist to their butternut squash soup. This year's variety is loaded with shrimp and well worth the hour we had to wait to sample it.
It was a nice surprise to find a hint of sweetness in the $9 squash puree. The sugary undertone balances out the bitter squash taste and mingles well with the shrimp, lightening up the fish taste.
Anyone who's been to the Linden Hills American bistro knows that they don't take reservations and they only seat 40 -- a lethal combination for a restaurant of their popularity. If you're able to nab a seat at the bar, the wait is easy -- grab a bowl of the seasonal butternut squash soup and outlast your competition. The soup is served daily during fall and winter hours.
