|Enjoy a summery salad at the bright and airy Burch in Uptown|
If kale was the hot ingredient of the 2012-13 restaurant season, then sea beans are this year's kale. Those briny, snappy succulents that look something like a cross between a very thin stalk of asparagus and a branch from an Evergreen tree appeared on the menus of some of our favorite local restaurants including Sea Change and Union Fish Market. But their best, most pristine use was in the summery sea bean salad at Burch Steakhouse.
Sea beans are naturally salty (and naturally pretty high in protein for a plant, too) so they make a great foil for something naturally sweet, like a lump of barely cooked Dungeness crab. At Burch, the kitchen dresses the shreds of seafood with a vaguely truffle-y aioli and a spritz of citrus. It's a simple, clean-tasting dish that's a perfect start to a big, robust meal of dry aged beef with Béarnaise and sautéed mushrooms, roasted cauliflower with super-creamy burrata, and a glass of nice Bordeaux. Steak is definitely not the only thing that commands attention at this modern Midwestern steakhouse.
