The cheesiest of trucks

Love cheese? Dream about finding a revolutionary way of serving it between slices of bread? Then Haley and Tony Fritz, the proprietors of the new fromage-centric food truck O'Cheeze, are your kind of people. This Saturday, they are rolling out their yellow mobile kitchen at Fulton Brewery, hangin' there all day from noon through 11 p.m., and presenting a menu of amped up grilled cheese sandwiches and soups.

With a menu of sublime melts between $6 and $8 plus a bowl of soup for $5 or a $2 cup with a sammy, O'Cheeze will not be dishing out the tired American cheese and Wonder bread combo. University of North Dakota alums Haley and Tony specialize in nouveau grilled cheese with creations like the Caprese, the Not-so-Classic (a blend of cheddar, havarti, and mozzarella), and the Holligan (with garlic mashed potato, Irish Dubliner cheddar, and an Irish whiskey reduction). Soups include Toma-cado and Skinny Bean Tortilla with chicken.

The truck is finally hitting the streets after one and a half years of active fundraising and recipe testing. Haley's social media degree will inform their marketing -- mostly on Facebook, Twitter, and Instagram right now -- and they'll make appearances in downtown Minneapolis, at food truck round-ups, and be available for private parties and corporations to start. They hit up Indeed Brewery Thursday for a dry run, but the pair sees this Saturday's residency at the Fulton Brewery as their coming out party, giving both interested eaters and stalwart supporters plenty of hours to try out the menu.

I love grilled cheese but $7 is a bit much.
