Prairie Dogs will host its first 10-day-long hot dog pop-up next week

Prairie Dogs is best known for one-night-only stints at places like First Course Bistro, where they transform a restaurant into their very own sausage sanctuary for a day. This time, they're extending their stay.

Starting June 16, pop-up pros Craig Johnson and Tobie Nidetz from Prairie Dogs will host their very first 10-day event at Sawatdee Thai restaurant in Eden Prairie.

The Sawatdee Prairie Dogs pop-up will run from June 16 to June 27 for lunch and happy hour. Johnson and Nidetz will premiere a red-curried Thai sausage, served in a bun with accoutrements such as pickled carrots and cilantro. The menu will also showcase their new event-specific Som Tum Dog, topped with shredded pork, green papaya salad, and fried shallots.

The pop-up pair was first introduced to the idea of nesting at Thai restaurant Sawatdee when they were approached by a friend of a friend.

"It's a celebration of Sawatdee's one-year anniversary," Nidetz says. "[Popping up at a Thai restaurant] is out of left field, which is what we do."

Not feeling so adventurous? No problem. The Prairie Dogs dudes will also serve up some of their in-house classics, including the Chicago-style Prairie Dog as well as their Coney Island-inspired Split Open and Melt.
