Red Stag to host Friends of James Beard benefit dinner

Buckle up your seatbelts Minneapolis, because the James Beard Foundation is coming to town in a big way. On Sunday, October 5, the Red Stag Supper Club will host a benefit dinner for the foundation, and the event roster is filled to the brim with top chefs from across the Twin Cities.

The host chef for the event will be La Belle Vie alum T.J. Rawitzer, who is currently serving as the executive chef for Kim Bartmann's vast Twin Cities culinary empire. Other guest chefs include Doug Flicker, Erik Anderson, Sarah Master, and last, but not least, Mike Brown, Bob Gerken, and James Winberg from Travail.

Tickets for this event will run $150 for the general public ($120 if you happen to be a member of the James Beard Foundation), but all of the proceeds will go to support the foundation's scholarship fund and various other culinary programs. The price includes hors d'oeuvres and a full five-course tasting menu, complete with wine pairings.

As is expected at a James Beard event, participating chefs are pulling out all the stops. Menu items include rabbit mortadella with collard green-lamb bacon kimchi, rabbit liver pâté, Chinese honey custard, beer tuile, orange-miso Sphere, and micro-tatsoi as well as celery root-foie gras tortelloni with pickled black walnuts, apple skins, sheep's milk cheese, and onion ash.

The James Beard Foundation was founded in 1986 as a way to help preserve and enhance the blossoming culinary culture in the United States. Today the foundation supports a variety of programs that include scholarships for culinary hopefuls, continuing education for chefs, and a variety of other activities that support wholesome, healthful, and delicious food.
